Roast Is Coming to the Phillips Tasting Room This Summer
We're teaming up with local food legends Roast to bring a new pop-up experience to the Phillips Tasting Room—launching May 12, 2025!
With the recent closure of the Victoria Public Market, Roast was looking for a new home. We’re stoked to announce they’ll be joining us at the brewery all summer long, serving up their signature lineup of roasted meats, sandwiches, sides, and seasonal specials—right here at 2010 Government Street.
It’s a natural fit. Great beer deserves great food, and Roast has long been one of our go-to favourites in town. From lunch hangouts to after-work beers, this partnership is about good food, good drinks, and supporting great local businesses in our community.

We couldn’t agree more. The Phillips x Roast pop-up officially opens May 12, 2025, just in time for the long weekend, and will run through to the end of summer. Expect rotating menus, weekend features, and the perfect pairings with our Phillips beers, cocktails, and non-alcoholic bevvies like iOTA.
We’ll be doing some minor updates inside the Tasting Room to make space, but we’re keeping things running throughout—no changes to hours or service in the meantime.
