Veggie Spaghetti Sauce

Serves six people.
 
◦ 750 grams spaghetti
◦ 2 large cans diced tomatoes
◦ 1 can crushed tomatoes
◦ 1 large can tomato sauce
◦ 1 small can tomato paste
◦ 350 grams sliced mushrooms
◦ 1 large green pepper, emptied and cut in squares
◦ 1 tablespoon of the following herbs; oregano, basil, mint, tarragon, sage, savory, marjoram, thyme and rosemary
◦ 1 whole chopped onion
◦ 4 cloves thinly chopped garlic
◦ 2 tablespoons olive oil

 

In a large, deep pot, heat the oil over low-medium heat and soften the garlic with the onion for five minutes. Add all tomatoes and mix thoroughly. Add the herbs and simmer for one to three hours. Add the mushrooms and green pepper 20 minutes before serving.
 
Pair with: India Pale Ale, Black Toque, Amnesiac
